One recall? That's not bad

My Jeep had about 5 in the few years I had it and at least one before I bought it. Most were software updates, one was a wiring problem, one installed a heat shield - some of them also made additions to the owners manual.

Your Jeep cost how much brand new, and how many of them are made? Granted the design hasn't changed for shit in decades so it shouldn't have problems but still.

Why can 15 year old mass production Toyota have less recalls that Mercedes' limited number flag ship car?

Precicely because it's limited number. If car X is going to sell 1000 times as many units as car Y, you spend more time/money testing car X, and just what you can for car Y.

Also, an SLR is pushing the boundaries of technology quite a bit more than a jeep.
