I've got over 1,000+ MP3 albums (I'm not sure how many thousands of songs that is though) and the only program I use is WinAmp 2.8. I've tried just about every MP3 program going, but I now exclusively use the old 2.8 version of WinAmp. I don't have a portable MP3 player either, but I've never really liked iTunes anyway.
I organize all of my MP3s in folders on a portable hard drive, and then have a folder containing a .M3U playlist file for each of the 1,000+ albums. Whenever I want to play something, I just open the folder (actually, I have it open at all times in my second monitor) and pick what I want to play from the list.
I've tried iTunes, but believe me, the way I have things set up right now is the only feasible way of organizing that much music.
