GNS3:
Emulates cisco IOS images, very handy for network guys to check their configs before uploading them. Much better than crap like Boson simulator which is missing commands and has many things mislabeled, things work when they should etc. With GNS3 (which uses dynamips as backend for the emulation) you can draw out your network and make it as complicated as you like and if it works on a real ios it works in GNS3, throw obscure configurations at it and it still works (I did load balanced point to point frame relay with it the other day images/smilies/biggrin.gif)

Highly recommended for anyone even touching IOS

Anyway, I'll contribute:

Mozilla Thunderbird 2

http://www.getthunderbird.com

An excellent alternative to the godawful crap that is Outlook. Manages email accounts extremely well.

OpenOffice

Yet another alternative to Microsoft Office products, OpenOffice is compatible with most popular document formats and is easier to use than you might expect.

TightVNC does indeed rock. It's even better if you download the DFMirage mirror display driver:

Depends on your hardware. For most modern mainboards it can, it's definitely worth a try. You can also have the fan speed variated according to the temperatures.
