James May was at the Mini plant last week for two nights following how one was made - brilliant stuff, may be on iPlayer by now.
 
More of a race documentary than a car one, but I generally watch Dust to Glory once a year, it's one of my all-time favourites.

Awesome coverage of the 1973 Targa Florio by the Swiss TV. Most of the footage isn't from the race itself, but rather from the practice laps, which were famously done without closing the roads to traffic. Partecipants include the usual suspects : Alfa 33s and Porsche 911s (among them, a purple one and one in Martini livery) as well as a Lancia Stratos and a Detomaso Pantera. Also features several onboards. Too bad it has french commentary.

Also from 1973, this one covers that year's Monte Carlo Rally, the very 1st WRC event. Sadly it's low-res, but at least the commentary is in english. The soundtrack is also great.
