mmm.. regina blau + pear + lightly salted whole wheat cracker.. .
 
Can any1 recommend a good reasonably priced, but sophisticated cheese? Lately I've been hitting a lot of Grana Padana (goes for ~10$/pound here), also some basic Brie and Gruy?re. I don't like smelly/molded cheese that much. Are there any 'hidden gems' that I've missed?

if you don't drown it in oil and herbes, it has no taste at all.


why hasn't anyone mentioned brie? that must be the most popular cheese around here

Depends on your access to a good cheese shop. I've never gone wrong with Comt?, which is an AOC French cheese.

These three are necessities every now and then... :drool: I grew up on Leerdammer, still buy it sometimes and it's usually gone quicker than intended. Fol Epi is nice, too.
 
EU wanted to ban all cheese made with non Pasturised milk there by ruining some cheeses - they are so stupid it hurts sometimes.

Gastronomes in Britain were today backing specialist varieties of cheese such as Cheddar, Cheshire and Lancashire which look set to be banned under EU rules. The cheeses, made by many of Britain's small farms, use unpasteurised milk, a process the EU intends to ban following food poisoning scares.

This Euromyth, which first appeared in the press in 1992 when the Council adopted a directive on public health rules for the production and sale of raw-milk products including some cheeses, has appeared again. Then, as now the UK was at the forefront of demands for the directive.

The UK Ministry of Agriculture, Fisheries and Food (MAFF) recently have produced consultations on diary product hygiene and on raw milk production regulations. The directive states that milk should come from animals and holdings which satisfy the health and safety requirements and are inspected regularly. The cheese produced should comply with specific microbiological criteria. Checks must be made for listeria and salmonella etc. which children, pregnant women, the elderly and ill people are particularly susceptible to.

The European Commission and MAFF recognise that the cheese industry is important and there is absolutely no intention to ban any traditional cheese. Neither MAFF nor the European Commission plan to ban the use of unpasteurised milk. The explicit intention is to safeguard consumer health and confidence.
 
Oh dear Lord... I just found out that the nearby supermarket sells or just started selling 100g packs of Grana Padano shavings, ready for the munching. :drool:

Sliced up some petit basque (hard sheep's milk cheese) with some wine I was trying to finish off as a quick snack

I prefer mostly harder, saltier sheep & cows milk cheeses. had some great smoked gouda when i was visiting the parents last weekend

You just think about what cheese is and it makes less sense that it got created.....

well, we eat a ton of cheese in my house ,but most of it is low-quality because good kosher cheese usually just doesn't exist. when it does, it's so expensive.

Also, Labaneh FTW. can't explain how awesome this yogurt-based cheese is. it's simply amazing. When I lived in israel, we'd get it at the super market. sometimes we'd go up north where the Druze live and get it from road-side stands too. Here in America, however, we have to get this mediocre kind from the Armenian store. it's just not the same.

So what were they doing then? Funny how the EU spends shedloads of my bloody money refuting policies that are clearly what the intention was.

Why mention MAFF that paragon of EU matey ness in the UK as being for it? Answer if I worked for MAFF and my job depended upon the EUs insane agricultural policy I'd be for it too.
So we now have it as a myth - or is it? Perhaps what really happened was the French got pissed at it and so it got stamped on? What ever the French and German politicians want is what gets done in the EU and bugger everyone else.

Everyone else votes with them as they know the Brits will kick up the stink and they can say - we are good europeans its just those nasty brits who aren't. My feeling is well F*** em - pay for their own stupid policies we should leave as soon as possible.

They can find the extra 14% themselves, perhaps the Greeks, Portugese, Spanish or Irish would like to contribute? What does amaze me is that no other country raises any of the obvious issues - are they just grateful that they are not shooting each other? Weird.

Listeria and salmonella are not something you want anywhere near you. Pasteurisation would kill them, or most of them, so the whole point of checking for them in raw milk cheese is to keep raw milk cheese as safe as other cheese.

Anyway, let's please keep this thread non-political. :)
