Post em up! Now, before someone mentions this I should probably point out that a 944, for example, is technically a hatchback, seeing as you can get straight to the trunk/boot from the passenger compartment (aka seats. and without folding them :p) Call it a 'coupe/hatchback' for all I care, terminology is not the point here. I'll start:

AMC Gremlin
AMC Pacer
AMC Spirit
BMW 1-Series
BMW 2002 Touring
BMW 3-Series Compact
BMW Z3 Coupe
BMW Z4 Coupe
Chevrolet Camaro
Chevrolet Chevette
Chevrolet Corvette
Chevrolet Vega
Datsun 240/260/280Z
Ford Capri
Ford Mustang II
Ford Pinto
Ford SHOgun
Ford Sierra
Honda S600/S800
Jaaaaaag E-Type
Jaaaaaag XK
Jensen Interceptor
Mazda RX-7
MGB GT
Morris Marina
Nissan 240SX/200SX/Silvia
Nissan 300ZX
Nissan 350Z/370Z
Opel GT
Pontiac Firebird / Trans Am
Pontiac Solstice
Porsche 928
Porsche 944
Porsche 968
Porsche Cayman
Reliant Scimitar
Renault Clio V6 Renault Sport
Renault 5 Turbo
Rover SD1
Toyota Celica MkI, II, III
Toyota Corolla (AE86)
Toyota Starlet
Toyota Supra (MkIII and MkIV, at least)
Triumph GT6
TVR Sagaris
TVR T350
TVR Tuscan R/ T400R/ T440R
Vauxhall Magnum Sportshatch
Volvo P1800 ES Sportwagon

I know that there are plenty that I'm forgetting...

Using that definition you can include the MGB GT and Triumph GT6.

Chevy Nova
AMC Hornet
Pontiac Astre (although it's a badge-engineered Vega, so it may not count)
Chevrolet Monza

If badge engineering does count, Pontiac Acadian.

Oh, some more I just remembered -
Mk 1, 2 , & 3 Toyota Celica
Ford Mustang II
AMC Pacer

Every single Nissan Z car ever made (except the convertibles) is a RWD hatch.

Likewise every almost all hardtop Jaguar E-Types.

And for my friends on the other side of the Atlantic -
Ford Capri Mk 2
Ford Scorpio Mk 1
BMW 2002 Touring

What about the old VW Beetle?

Golf yes, Beetle no. The cargo compartment is on the other side of a bulkhead from the passenger compartment and you can't get to it without getting out of the car.

Others that are missing:
Porsche 928
Porsche 968
Nissan Silvia/200SX - S10/S110/S12
Toyota Celica - Gen 1-3 (A20/A35/A40/A60)

Any BMW/Mercedes wagon, if they count. Same for many 2WD SUVs such as the Ford Explorer.
