We have many of them at customers and they work as intended.

That said, there's only integrated graphics, you can't get a dedicated graphics card. Video editing is of course possible, but with a dedicated graphics card and at least two SSDs (one for the source files, one for the target files) you'll get much more performance for the price. You can even get a Mini-ITX-system with a dedicated high-end graphics card, plus it's upgradeable and has more space for HDDs so I'd say if you don't want a full tower but still massive power you should get a Mini-ITX-system.
 
I am looking into getting a Intel? NUC Kit NUC6i5SYH, the concept is very tempting.

The only demanding stuff it will be used for is video editing.

If your main aim is for something compact, I'd look at the Skull Canyon

The USB-C/Thunderbolt 3 port will extend its lifespan by years.
 
And if you want to game with that thing, it'll be a great addition as you can plug something like a Razer Core through Thunderbolt
