The car looks extremely stable at high speeds (250 km/h?).

It is. Adding to it is the Active Body Control system, which actively counteracts crosswinds. You could take your hands of the wheel at 250 m/h and the car would still head straight on almost uneffected by crosswinds.

250 km/h in the S-Class ist more relaxing, than 140 km/h in my Golf.

So you push it harder and harder and harder to make it louder or lower more quickly. But when you push too hard, the horn goes off.
