This has probably already been established, but I'm quite sure the Audi RS6 vs. French Skiers and BMW M3 vs. Merc C63 AMG vs. Audi RS4: tracks are the same.

Okay folks, finally I have an answer! Thanks to assistance from the great Top Gear staff, the music in question is music from "Si J'etais Toi" (aka 'The Secret') composed by Nathaniel Mechaly. And as I suspected, all the incredibly elusive music from the past seasons below is also from this score. It's a great work to say the least.
