BBQ'ing with Haib!

So this afternoon things got a bit lazy between cleaning the garage and forgetting that I had a birthday party to go too (did not remember till i was doing BBQ'ing =P) I thought lets not BBQ a few of the steaks i had in the fridge i picked up.

So first getting the steaks prepared. Usually I do the basic salt and black pepper but this time I wanted to try something new and found someones thread on smoking steaks. (http://www.thesmokering.com/forum/viewtopic.php?t=14426&highlight=smoked+steak) Well I am not smoking but I stole the rubs =P
The two rubs needed are

1) Montreal Steak seasoning (Find this at your local store)

2) Magic Dust ( http://bbq.about.com/od/rubrecipes/r/bl50617d.htm )
* 1/2 cup paprika
* 1/4 cup kosher salt, finely ground
* 1/4 cup sugar
* 2 tablespoons mustard powder
* 1/4 cup chili powder
* 1/4 cup ground cumin
* 2 tablespoons ground black pepper
* 1/4 cup granulated garlic
* 2 tablespoons cayenne

Personally I would have increases the cayenne but it was good as is.

Throw some olive oil on the steaks and apply a good layer of Magic Dust and work that in, then some of the Montreal Steak seasoning.
You then wrap it all up and throw it in the fridge for at lest an hour and half (I went a bit longer but it does not matter).

Now you need to get your BBQ. Real men dont use gas but use coal. And today I decided to try something new and that is this



costs a little more then the kingstone stuff but I feel a lot better. It gives you a more smokey taste. Also this time I made my own chimney ( check this out if you dont know what it is: http://www.barbecue-store.com/chimneystarter-stainlesssteel.htm ) to light it with so no need to use any lighting fluid. Also it just looks so much cooler!

Once you have the coal in the pit dont forget to put some oil on grill. I use grapeseed oil as it has a higher flash point compared to olive oil. But any oil will work as you just dont want stuff sticking to the grill, you want it in your tummy.

So get the coal going and wait till they turn white before you start the steaks. Myself, i got lazy and started some burgers first =P

Things to watch out for is first is the fat dripping down as they will cause flare ups and burn the meat more then you want (that is what happen to the first steak you see in the picture) so keep a little water to throw on the flames to cool them.

And you need to grill them till they are the proper temperature you want, for me i eat medium well done to well done so I dont need anything to keep track of temperature but if your going to do rare make sure the temps are correct.

I dont have any after pictures because I got too busy eating them as they where great! And then I started to make smoores =P

I would recommend this recipe and I would do it again for sure!

Sorry, but you don't BBQ a steak. You grill a steak or burger. Grilling is hot and fast over direct heat, BBQing is low and slow over indirect head.
 
It depends on where you're from - like the Wikipedia article says, the Brits (I think the Aussies, too) use "barbecue" and "grill" almost interchageably. As in "let's put some shrimp on the barby." It means different things in different places.

For me, of course, grilling is fast cooking over high heat (either flame or hot coals), and barbecue is low, slow (like 10-15 hours) and smoky. Two completely different flavors. But that's 'cuz I'm from 'murricah.
