What cheese and spices do you put in yours? I'm looking for ideas.
 
Just a small amount of Chilli powder and mustard power
 
Use some hairy chested cheddar. I hate cheese sauces made with bland, mild cheddar. It tastes of nothing.
 
Parmesan, Cheddar (old), a pinch of nutmeg, 2 tablespoons of butter, 1/3 teaspoon of oregano, black pepper and milk.

I usually start with making a base from melting butter in a saucepan, then I mix in some wheat flour and thin it out with milk to make a B?chamel sauce. When I have a reasonably thin white sauce I mix in some Mozzarella, the proper "wet" Italian ones. Make sure to slice up the Mozzarella into tiny pieces first, that makes it blend in more easily. Then I grate up some nutmeg, before I finally add some shredded Parmesan cheese. Getting the Mozzarella to blend in can be a little bit tricky, you'll have to work the whisk pretty hard. Mind you, the sauce gets hard pretty fast when it cools down.

I use this cheese sauce for all kinds of pasta, and it works really well in Lasagna as well... :D
 
Anything with Roquefort. That stuff is god like.
