The races are first done properly in one go with in-car footage and Range Rover camera cars around the racers. Afterwards the crew goes back and fills in the blanks.

Suggest you buy a DVD version and listen to the crew commentaries. They five a lot of insight into how the specials are filmed. There are certainly people in situ before the presenters arrive - they don't make any secret of the fact, but I don't think this was the case in the rainforest.

Another example of this is the race with the Veyron against the plane. They can't have actually been racing. They must have to put the segments together to make it seem like a race.

They did actually race, like Narf said. But, as I said in another thread a while back, you chose the example where they most blatantly manipulated the in-vehicle commentary to add "tension". One example: the "fuel stop" in Saint Etienne wasn't a "surprise", since James clearly gave Saint Etienne as his destination when taking off from Alba. If they'd been honest from the start about the flight path, the fuel stop, and having to take the Eurostar, it would have been a lot better, but then it would have been a clone of the Verbier race. I can kind of understand why they did it the way they did it, but it's hard for me to accept the results. The more you look at it, the more James and Richard come off as morons.

The Truffle Race was the French car of Top Gear Epic Races: looks great on the surface, but there's shoddy build quality underneath.

No. That was mostly the "guy in a bustier sticking his cock in an exhaust pipe" photo. This was worse: it was actually published in a newspaper.
