Random Thoughts....

My phone is telemarketer proof! I just got a call and when I flipped it open to answer it made a weird screeching noise and the screen went all white. It's never done that before and this was the first telemarketer call I've gotten on the phone. I checked the voicemail and sure enough..."Congratulations! You've won" DELETE.

I've just found out something bit odd....
This is the Fuji S5:

And it looks exactly the same as the... Nikon D200!

Wikipedia says the Fuji is based on the Nikon. So there we are: Evidence that the camera world has a DaewooLet syndrome!

... and I just realized that No Boss is a bit too close in location to me..

"Based on" the Nikon is putting it lightly! Fuji can't afford to set up their own camera system, so they license the F-Mount from Nikon and buy D200 chassis from them in bulk, which they stick their own electronics in. Fuji gets to sell cameras and Nikon gets to sell more lenses, win-win.

Anyone ever had one of those days that's just crap from the first minute? You know the one I'm talking about; where from the moment you wake up you just know it will be a shitty day and all you want to do is roll over and go back to sleep.

Yeah, today is one of those days. Sicne I am typing this I'm sure you can guess that my first plan of action did not reach fruition. Curse my sensibility!

I've had a serious case of The Fuck-Its recently, and it's starting to show.
Yeah, I got up this morning ... way too early, my room was stone-cold, and I went to bed late at night, and I couldn't get back to sleep.

Today I had 2 midterms, one ridiculously hard, and the other one was flawed ... the teacher miss-wrote 1 of the questions ... lost a ton of time and marks on that one. Didn't do very good on either. AND I was half-asleep during the exams.

To top it off, the second midterm exam was in the evening. I just came back from it 40 minutes ago. It began at 7 pm. :( What's more, I have another midterm tomorrow, so I have to stay up late in the evening and study for that one too. Won't get much sleep tonight either. Goddamnit.

So yeah, I know how you feel, I had an awful day too.

Frederick, eh? That's only about 3.5 hours away... I'll swing down and pick you up in my van:

What's a good chicken recipe that will impress some sorority girls?

What's a good chicken recipe that will impress some sorority girls?

I came up with this one a while ago:

Ricotta-stuffed baked chicken

You will need:
some LARGE chicken breasts (insert sorority pun here)
Some large Zip-top bags (gallon size at least)
Rolling pin or meat mallet
Ricotta cheese
Sun dried tomatoes (not packed in oil)
marinated artichoke hearts
some good Mediterranean olives.
Olive oil
Various herbs and spices
Japanese-style breading (can't remember the name, starts with a "T" I think. Regular bread crumbs will work but not as well.
Oven pre-heated to 350 degrees
Casserole pan

Break up the olives and remove any pits, you want smaller pieces but not minced or diced.
Roughly chop the artichoke hearts
Julliene the sun dried tomatoes.
Fold this into the Ricotta cheese, along with mushrooms or whatever else you think sounds good. -Cover an put in the fridge.

Put a chicken breast in one of the large gallon bags and pound it thin with the mallet. Don't make is paper-thin, you want it to be no more than 1/2 inch thick, but try to make it uniform otherwise it won't cook evenly.

Lay out the chicken and spoon some of the stuffing into the middle, you should use enough that you can just get the two sides of the chicken to overlap. Rub the outer surface with olive oil and place the joint-side down in the casserole pan. repeat this process with the rest of the chicken. The pan you choose should be small enough to keep them from unrolling but large enough that they are not crammed in there.

Now that all your chicken is coated in the olive oil, use your hand and coat them in the breading. Sprinkle some breading over the top, it will brown up nicely.

If I recall it will bake for 30-40 minuets, to get the right toasting of the breading I clicked on the broiler for the last minute or so.

Enjoy.

PS - Any leftover stuffing can be baked at 350 in a rammakin and used as a hot spread for bread, chips or toast corners. It makes a fantastic appetizer
