Sheperds pie!

Made this tonight. SOOOOO good!

Ingredients

* 1 tablespoon butter
* 1 tablespoon olive oil
* 1 onion, diced
* 2 carrots, diced
* 2 stalks celery, diced
* 2 cloves garlic, crushed
* Salt and freshly ground black pepper
* 1 tablespoon tomato paste
* 2 pounds lean ground beef or lamb
* 2 tablespoons Worcestershire sauce
* 1/2 cup beef stock
* 1 1/2 cups garden peas
* Cheesy Mashed Potatoes, recipe follows

Directions

Preheat oven at 400 degrees F.

Add butter and oil to a large skillet on medium heat. Saute onions, carrots, celery and garlic until tender for about 7 to 10 minutes. Season with salt and pepper. Once the vegetables have softened and start to brown a little add the tomato paste and mix evenly. Add the ground beef and cook until beef is no longer pink about 10 minutes. Add the Worcestershire sauce and beef stock. Season with salt and pepper, to taste. Cook and simmer for another 10 minutes. Mix in peas. Transfer mixture to an oven-proof baking dish and spread evenly. Place potato on top of ground beef mixture and spread out evenly, once the top surface has been covered, rake through with a fork so that there are peaks that will brown nicely. Place the dish into the preheated oven and cook until browned about 20 minutes. Spoon out the shepherd's pie and serve.

* Mashed Potatoes
* 4 pounds potatoes, peeled, quartered
* 4 tablespoons butter
* 1/4 cup heavy cream
* 1 cup grated mature white Cheddar
* Salt and freshly ground black pepper

Fill a large saucepan with cold water and a tablespoon of salt. Add potatoes to the water and bring to a boil. Let potatoes cook until soft about 20 minutes. Once the potatoes are at a desired density, drain the potatoes and place them back into the saucepan for mashing. Add butter and cream and begin to mash potatoes into a semi smooth consistency. Once at desired texture add cheese and mix well. Season with salt and pepper.

It's actually Shepherds.

It looks wonderful though.

Long time since I've had a good shepherds pie.

I also can do that but it looks time consuming -- although not as much as my recipe for Moussaka.

Seriously, that doesn?t sound that hard to make yourself, does it? I might change small bits like the cheddar (since I don?t know where I can get some here) ... but that one I will surely try ...

Nah, it's easy.

I also can do that but it looks time consuming -- although not as much as my recipe for Moussaka.

Took about 40 minutes from start to finish.

Pie made with lamb = sheperds pie

Pie made with beef = cottage pie

No ground lamb at the store. :(

On the cheese front any hard cows milk based cheese will do - does not HAVE to be cheddar - Red Leicester worked - er so does Edam / Gouda. I Like the swiss cheeses too but they are expensive here - like Grurere (Sp?). Mmmm nice. The Garlic is not traditional btw but recommended by me - I also have tomato paste/pur? in with the onion fry, nice (goes well with the beef stock taste).

I woul not infuse the Potato with the cheese myself, allows some members of the family to avoid the cheese when serving too - I grate liberally over the top at the end and grill on high heat until the cheese has melted, or failing that turn oven right up to v.hot and put the pie in with the cheese on until it begins to melt.

Looks good man. But to add a bit of awesomeness, I always add diced smoked bacon to the mix. It adds that bacon awesomeness you know you want.

You know, I thought about that when I was making it. But, I wanted to try it this way before messing with it.

And yes, I got it with the lamb. Next time, I will have the butcher grind some for me.

Came around to try it this weekend ... with beef ...

I didn?t use worchester sauce and tomato-extract like in the recipie because I thought I still had some in the kitchen, but hadn?t and I was too lazy to go to the store again. And I used chicken-stock rather than beef-stock ...
Still came out very good and tasty, really rather fool-proof.
I wanna try it with Lamb now :)

I find this version to be the best, the shredded carrot, Parmesan, and red wine just set it apart. Too bad it's a bitch to find decent lamb here.

I have never had anything like this, but I must say it does look very good.
basically this is just meat + veg + potato mash + cheese, stuff it in the oven and eat it, amirite?
