They are stick to those two 8 and 12 cylinder engines because they are small company. They cant afford to invest making new 6 cylinder and nothing is certain that it would be better than Porsche in the end.
Even Alfa Romeo uses same V6 engine block as GM, its financial reality.
But I'm no Ferrari expert so of course anything is possible on the engine side.
Offtopic I guess, but that reminded me. I've heard that original Lotus Elise was influenced by Dino (head designer had Dino at that moment), and now looking at photos they are similar on some ways! The front at least.
