Thought I may as well put this all in one thread instead of spreading it around, things are progressing more quickly than I thought.
It's now almost 5 years since I built this 8th gen. i7 PC, I've only really had one issue in that time and that's with the AIO. In 2019 it decided to leak (the night before the roadtrip), fortunately not causing any damage to the components. Deepcool replaced the AIO with a newer 'leak proof' model but after less than 2 years the RGB in the pump lost its mind. Needless to say, I won't be buying one of their coolers again.
So as a reminder, the specs of this machine are:
Corsair Crystal 570X case
Corsair HX750i PSU
ASUS ROG Maximus X HERO
Intel Core i7-8700K
DeepCool/GamerStorm Captain 240 Pro 240mm AIO cooler
32GB G.Skill TridentZ RGB DDR4 3466MHz
1TB Samsung 970 EVO NVMe M.2 SSD
Nvidia GeForce RTX 3080 (purchased in 2021)

The only other issue is with the ASUS Aura Sync RGB, it works but it keeps resetting itself to red. So much so that for the last few months I've just left it red. I'm moving away from that in the hope that an alternative system is better. Could be a disaster.
The reasons for the upgrade are to get the best out of the GPU now I have a 120Hz 4K display, the old i5-4690K server is struggling with the tasks I give it and my parents are still using a Core 2 Duo with Windows 7 - that sorely needs replacing. They will get the i5 everything, the 8th gen. i7 will be moved into the server case and will have the RAID/SCSI controllers shoved up it, then the new parts will go in my existing case. I quite liked the idea of a new case but wouldn't have much use for the 570X (it's way too big to be used for my parents' machine) and the new case I like is £385. Ouch.
So the new spec:

Thermalright deflection plate as recommended by GamersNexus (because why not?)

2TB Samsung 980 Pro NVMe M.2 SSD
GPU and case re-used.
New Windows 11 key.
I planned this for a Christmas break build and it still may be, I was also waiting for the 13th gen. i7s and Z790 boards to come out but the prices are way too high for me. I kicked things off earlier than expected by getting the SSD with £80 cashback and the PSU with 12.5% off.

Then in the last week I collected a load more parts. The motherboard was purchased when it was at its lowest ever price of £290 (still a lot more than I paid for the Maximus X Hero but way less than a Z790), the RGB RAM came from Corsair with a 10% discount code I was given when I bought the PSU and the CPU was bought at at a lowest price on Amazon. I could've waited but the bonus Amazon reward points on my credit card are ending in a week.
The CPU frame also came from Amazon, it was £15 but there's no way I was waiting for AliExpress. They only had the black one, that's perfect for me.

When I ordered the RAM, I also got some case parts. I got a spare triple fan/360mm radiator mount plate to go at the top as per this Corsair forum post, and a closing plate for the PSU cover that I didn't even know existed.
I don't like the way it provides a flat wall rather than guiding the air from the bottom fan neatly up to the motherboard and GPU, so I may 3D print a ramp to channel the air up above the cover, however this will at least give me something to mount it to and it was cheap.
I just need the cooler now, like I said there was no intention to get everything so soon. I'll reinstall the original Corsair RGB fans if they connect up to the Commander Core controller I have, otherwise I'll keep these ones and plug them into the motherboard. The iCue software still allows syncing with ASUS Aura for the motherboard and GPU, I just hope it's more reliable.
As far as Windows I have a new W11 key and a Pro ISO downloaded from the Volume Licencing Service Center (there is an advantage to working in IT sometimes), all the other machines will keep their installations as the hardware is moving as a whole. The Windows 7 machine will stay exactly as it is with its legit W7 Pro copy and will go in the attic for later use. I've thrown away too many computers, I miss my old Core 2 Quad Q9550.
Next update will be when I buy the cooler at a good price I suppose.
