Just a quick question - your food looks yum and I really want to have a go at key lime pie, but there are two ingredients we can't get in the UK - key limes and graham crackers. Now I can probably get hold of a bottle of juice, so I guess when it comes to cooking the pie, I'll just have to play with myself as I won't have to juice the limes myself (and if I can't, the whole thing kind of becomes made of fail anyway) but what would be a good substitute for the cracker crumbs? I suppose I could crush digestive biscuits (that's what I normally do for cheesecake etc.) but would they be too sweet?

Bugger. If I have to crush the biscuits, that'll take up the time I could have used to play with myself :lol:

You don't have graham crackers? What!?

I guess you could use some sort of cracker or hard cookies to break up. Yahoo answers says to use a wheat biscuit. And make sure you use Key Lime juice, Lime juice will make it taste shit.

Don't put bugers in it, I'd use food coloring if you really need to have it green.
 
Thanks :D Will seek out Key Lime juice when I'm in London on the weekend and try some wholewheat digestives as a base. And I definitely won't use ordinary lime as the thought of a pie that tastes shit is quite unappealing :)

No, recipes posted for a while! Gotta kick start the food section.

Twerp's Meatball Stew

Ingredients

Meatballs:
1 lb. Ground Beef (the leaner the better)
1 lb. Ground Pork
5 tbsp. Parmesan cheese
1 Bunch Parsley
1/4 cup fresh breadcrumbs
1 tbsp. minced Garlic
Milk
Salt & Pepper
Flour

Stew:
2 cups chicken stock
3-4 large russet potatoes, peeled and chopped into cubes
1 lb. carrots whole baby or chopped
1/2 sweet onion chopped
1/2 cup red wine
4 tbsp. tomato paste
1 tbsp. Dried Oregano

(Ignore the lemons and the vermouth, I'm using them for another recipe, just happened to be on my shopping list today)

Soak the breadcrumbs in Milk,

Combine all ingredients in bowl,

Roll into 1"-1.5" balls, and dust with the flour and fry in olive oil (If you have a cast iron skillet use it!) After they turn brown throw the skillet in a 425 degree oven for 7-10 minutes. Set aside.

Combine all the stew ingredients in a crock pot or large pot, place crock pot on high until the potatoes start to get tender, then turn the pot to the lowest setting and add the meatballs to the top. let the potatoes cook 'till tender then stir.

I'm not updating pics of the last dish because it didn't turn out quite right and I really don't feel like it. So then on to my next recipe.

Cajun Blackened Catfish
It's Mardi Gras!

Ingredients:
1 Catfish Fillet
Olive Oil
Lemon

For the rub:
1 Part Salt
1 Part Pepper
1 Part Cayenne Pepper
1/2 Part Thyme
1/2 Part Onion powder

Wash the catfish, prepare the rub, and work it into the fillet. Brush with oil and refrigerate for at least 1/2 hour.

Heat up an oiled pan on high until the oil is just about to smoke, add the catfish and continue to cook on extremely high heat. The pan has to be hot to blacken the meat which is essentially burning the blackening rub.

Flip, and cook until firm to the touch, like a well done steak.

Twerp's Monster Breakfast Burritos (Without the Burrito cause they were out)

Ingredients

Pico de Gallo

8 Roma Tomatoes, diced and seeded
1 Bunch Cilantro, chopped
1/2 Yellow Onion diced
Juice of one Lime
2 Serrano peppers, seeded and minced

Burritos
1 Dozen Eggs
1/2 lb. Sausage, crumbled
1/2 lb. Bacon, crumbled
1/2 Red Pepper, diced
1/2 Green Pepper, diced
1/2 Yellow Onion, diced
2 Russet Potatoes, peeled, par-boiled, diced
Colby Jack cheese

Mix the Pico de Gallo

Prepare the bacon and sausage

Saute the potatoes, onions, and peppers, for a few minutes. Add in the sausage and bacon, continue to heat for another few minutes. Add in the eggs and stir until liquid is cooked out.

Top with cheese and Pico. Eat out of a bowl when you forget to buy burritos.

Don't spoil it for those of us who like hi-res.

It's not that hard...

Alternatively, and arguably a better solution as it means the thread doesn't lag and users aren't downloading unnecessarily large files, post a thumbnail to a hi-res image, that way everyone's happy.
 
I'm just lazy and didn't resize my pictures from my previous stuff. Resized this batch to 1024, but next time maybe we'll go to 800x600.
