Apologies for the extremely LQ cellphone pictures, but I realized I had to actually make my own lunch instead of buying from outside
, so I forgot to recharge my camera battery in the morning.
I made veggie quesadillas. Veggie because I'm vegetarian.
This is what i used to make the Kay-sa-dee-yas:
Ingredients:

Thaw soy crumbles on hot saute pan, and cut bell peppers and red onions while waiting. Get all other ingredients ready.
Add a little bit of oil (olive, canola, human, it doesn't matter) and toss in peppers and onions.
Add a tiny bit of chili powder, turmeric, asafoetida (aka hing) powder, stir.
Cook while it's still freaking edible, turn down the heat if necessary to prevent burning down the building.

Take store-bought tortillas, put em on a skillet.
Take some shredded cheese and add to one of the halves of the tortilla.
Add the mixture once the cheese has shown evidence of meltage.
Fold over, put it in a plate, and eat.
Apologies for lack of pictures on the last few steps. I ate all my kweyzadillaz before I was able to take a picture
. Should be self-evident though.
You may notice some weird green vegetable in there. I just added some leftover bitter melon that my mom made the previous night for dinner. Just added it at the end since it was already cooked and just needed to be warmed.
